About Norigami

Norigami’s inspiration comes from the marriage of nori, meaning seaweed, and origami, a type of Japanese paper folding technique. Much like how origami can transform a single piece of paper into endless forms, Norigami uses sushi techniques to transform fresh fish into endless possibilities. Both are handcrafted to bring out the beauty of a piece of paper, a piece of fish.


Fun fact:
We serve our nigiri on colorfully patterned Japanese washi paper. At the end of the meal, some guests have been known to fold the washi paper into a crane, which goes into our paper crane “centerpiece" — a glass bowl that houses all of our guest-made paper cranes.

Chef David Tsan

David Tsan is the Executive Chef of Norigami, an award-winning sushi restaurant that has received the Michelin Bib Gourmand award in 2023 and 2024. David was born and raised in Taiwan before moving to America at the age of 10 to attend school.

Combining his taste for fresh ingredients and his passion for bringing people together through food, Chef David created Norigami to “offer high-end and quality fish for a reasonable price in a casual setting.”

An Orlando native through and through, Chef David calls this city his home. In his free time, he enjoys golfing and trying out new restaurants.
